Congratulations you’ve just bought Yourself a new coffee set up you’ve got Your coffee machine out your grinder all Your bits but you don’t know what you’re Doing let me talk you through my Beginner’s guide to getting yourself Started on your new home coffee setup [Music] So from the start I’ll let you know that This is going to be a super simple video We’ve done technical videos on this Grinder the difference between baskets Spinning milk all of the little things That I’m going to talk you through I’m Not going to go into detail because We’ll list in the description below a Bunch of videos that we’ve done in the Past that can give you the detail you Need I just want to talk you through the Different parts of the machine the Things you would have got in the box and How to get started on setting up your Coffee machine so that you can make Yourself a brew as quickly as possible So let’s start with your machine I’m Lucky enough to be working with a rocket Up at Mentor today maybe you were lucky Enough to gift yourself one for Christmas or someone has bought one for You but a beautiful machine and e61 Group head so there is the opportunity To upgrade to 21 gram baskets and make Even better coffee there so these are Your this is your hot water tap you have
Your steam tap there nice good steam Pressure that’s your steam wand This is your group handle also known as Your portafilter and there’s a basket Sitting inside there as well your drip Tray to make sure you’re catching all That waste we are just using the tank Entire in in the top of the machine so We’re just filling that one with water And depending on your machine not Knowing exactly what you have definitely Read over the instructions make sure you Have gone through the setup guide Because there may be a few extra steps That I’m not covering for your Particular machine so run through that Make sure you’ve done all the right Steps make sure it’s full of water Before you turn the power on we don’t Want to burn it out first thing Um you’re also going to need some good Crockery when you come to Pour Your Lattes now this is the ferenzato all Ground grinder we’ve just done a video On this one to check it out beautiful Grinder if you haven’t got a grinder Already and you’re just using pre-ground Coffee that would be a little bit Different to this and I would definitely Recommend buying yourself a grinder it’s Going to make a huge impact on the Quality of coffee that you can make but You can adjust to suit And watch this video and it will still
Apply now of all of the bits and pieces That you would have got in your box you Might have found a single spout handle Which will probably have a smaller Basket for it these aren’t our Recommendation we find that they’re not Going to produce as good a coffee as if You find yourself a good double spout And a bigger basket now that will hold More coffee and will give you an Opportunity To extract flavor from more coffee and Once you start to learn about coffee You’ll understand what benefits that big Big basket and more coffee will have a More opportunity for flavor so grab your Double spout grab a large basket and get That ready Because we’re going to need that we also Want to just I’m going to get that drip Head nice and warm so you can put that Up in the in the group head there we do Want that warm with the machine so that We’re not affecting the Brew temperature By hitting it with a cold head and that Cold head is actually taking all the Heat out of the coffee now when you turn Your machine on how long does it take to Heat up that is a question that’s always Different on different machines I would Allow 15-20 minutes at least just to be Sure it might be an indicator light if You do have a gauge on the machine You’ll this particular machine has a
Green range but you would be looking to Make sure it’s at least above one of That bar pressure ideally around that 1.2 1.3 would be a good indicator also Just by feel careful because it does get Hot but make sure your your handle is Hot you’ve got you do have good Steam And your hot water is Flowing then you Know you’re up to temperature because if You start making coffee on a cold coffee Machine it will change as it gets hotter So we want to make sure it’s nice and Hot and prepped ready for to go Now we’re almost ready we just need to Make sure that we do have some good Coffee now grab some Champion beans from Rtc.com.edu or go to your local roaster Buy yourself some beans check the roast Date and try to buy beans that have a a Roast date rather than a best for four That’s going to mean that you can Actually manage how fresh that coffee is Ideally you’re using it between 7 to 21 Days so that’s really important because If you haven’t got yourself the right Age beans you can do all this prep and You can run the shots and you’re still Not going to be happy with the quality So grabbing yourself some good bait Inside the champion blend is going to Make a hell of a difference to making a Good cup of coffee at home and of course When we go to spin our milk we’re going To need some milk jugs
Some machines will actually have them With them come with some milk jugs and They will also come with a Tamp but not Always Make sure you get yourself a tab or and If you need a little tent mat just to Save your bench from getting damaged so This should be everything I need to get Started making my first cup of coffee so Let’s get stuck into it now before we Make a coffee I just want to give a Shout out to designer living kitchens They are letting us use their beautiful Showroom to shoot here today our Espresso Bar is so busy it’s hard to Find the time between customers to shoot Videos so we really appreciate it so if You’re on the cost coast and you’re Looking for a new kitchen we’ll put a Link Down Below in the description give The team a call All right so let’s make your first Coffee together so first things first Let’s grab that group handle out and We’re just going to run some hot water Through the machine now we want to lift The lever all the way up and just get Some hot water flushed we’ll push that All the way back down so now we know We’ve got hot fresh water ready to go Now this basket a little bit of Condensation we want to make sure that’s Nice and clean and dry just with the tea Towels fine
Good to go now we’ve just got a factory Settings so no idea really what’s going To happen and in this video I am Grinding straight into my portafilter as You learn about coffee and as you Progress there’s definitely the next Step is only about weight-based grinding Recipes but I’m not going to confuse you With that right now I just want to get The coffee in the basket and get you Started so Recovery goes on Handles there Now if you did a little tap you’ll make Sure that you don’t lose any of that Coffee out Of the basket we want to catch all of it Because again we’re just trying to Repeat the same thing each time great so There’s plenty of coffee in there for me Now I actually think that’s going to be Too much coffee and what’s what we’re Trying to do here is find a way to kind Of repeat this so I’m actually just Going to use my finger or those little Tools like this that you can use just to Take the top of it off Because I can repeat this over and over What I’m looking to do is just have a Flat top of coffee there so when I Tamp Onto it it should be at the right level Now I’m going to bring this down onto my Bench using the edge of my quarter Filter I don’t want to be on the spout
Because I might damage my new spouts or Get coffee on them and we don’t want to Send that into the next person’s cup so First temp is just a good amount of Pressure so we really want to make sure This is flat don’t be too concerned About the mess but we want to keep as Much of that in there as possible now a Tamp isn’t super hard you want to make Sure you compress the coffee so the Water can flow through it easily all of This process just keep it consistent Whatever you do Do the same potent pressure next time Temp pressure isn’t the thing that you Want to change to make your coffee taste Different so you want to do that the Same every single time cool coffees in The basket now it’s just below the line If you need an indicator you just want To make sure it is below that line so That that’s where the shower screen sits We’ve got enough room for some expansion And the coffee to brew now let’s get This on And I’m going to run straight into my Cup We want to get that started as quickly As possible we don’t want the coffee Sitting in there While it’s too that hot So what’s going to happen well it looks Pretty good straight out of the gate So as soon as we see that blonde and
That wavering lines and those that Twisting that’s an indication that You’ve got the full amount of coffee out Liquid out of the coffee that you put in The basket now One thing about this is as you discover More about your machine you will learn What speed and what coffee is going to Taste like and what it looks like as you Go but to me Or it’s a little bit sour because it ran A little bit quick so all I’m going to Do Is just change my grind on here to be a Little bit finer that’s going to make my Coffee go a little bit slower so there’s My indicator here I’m just going to do a very small change And we’ll see we’re up to So Now when I do make a grind change There might be a little bit of ground Retention there so I need to make sure That I’m getting all the coffee Through Now even I make a mess so don’t be Concerned if you if you do make a mess Hopefully I want this let’s put another One on So give that a nice dry wipe again And we’ll get our next grind started So obviously if you have free ground Coffee You’re scooping your program coffee into
There don’t worry about the scoop size Or anything like that we just want to Make sure that we’ve got enough coffee In the basket so that if we give it a Little side tap we get ourselves back to There so we’ve got a good amount of Coffee in the basket so when we go to Tamp We’re back where we started so I’m going To use a large cup which is that’s about A 10 ounce about 300 ml cup and I’m Going to use my full double shot and Then we’ll spin some milk so put that There cup underneath Later on and again we’re going to keep An eye out for this blonding and this Wavering flow and that’s going to give Us the indication that that’s the most Coffee that I can liquid I can get out Of that amount of coffee Oh this looks a bit nicer nice dark Rich Colors I don’t want to see the drooping If you see drip drip drip for too long Then our coffee is too coarse now we’re Definitely seeing those blonding and That wavering line now beautiful I’m Going to run with that so that is what You’re looking for a nice steady flow we Don’t want it to come flying out if it Comes flying out you need to go finer on Your grinder if it drips For more than three seconds or three Drips even you need to go coarser to let The water flow through the coffee more
Easily so that’s the the basic grind Changes rule book there so now let’s Grab this coffee And let’s go get some milk and spend Some milk all right so grab yourself Some good full cream milk anything skim Or light’s only going to make it hard For you so some good full cream milk now You might have a big jug and a small jug For you while you’re learning the big Jugs are just going to give you a better Amount of time To work with that milk so have a look at How much I’ve put in there I have put Plenty in there that’s going to give me The right amount of milk for this big Cup maybe even too much but it is going To give you enough time so if you find Yourself putting not enough milk in There you’ll have a hard time getting a Good angle on the Steam on so let’s just Go with a simple rule of about where the Spout ends there so there is another Video that we did on milk levels so as You get better at spinning milk you’ll Understand that but for now simple rule Is to just get it under that spout Whenever we’re using a steam on we want To be purging before and after so let’s Get it get that any of that condensation Out of the steam one Ready to go now your steam wand Just needs to sit In your milk now the angle that we’re
Looking for is to get on a 45 degree Angle and we want to push the milk Around Now we’re not going to get too connected Technical but we want to make sure that You’re getting movement through the milk If you have bought a thermometer get it In there because that’s what’s going to Make sure that you have a better control Of that milk you’re aiming for ideally 65 degrees on your thermometer at an end Point which you just need to work out at What point you turn off so the milk Continues to heat and ends on 65 degrees 65 degrees today I am just going to hold My hand on the side of it when I feel Like it’s too hot I’ll just give it Three more seconds and I’ll turn that Off So coming nice and tight have a look at The way that steam one’s sitting to the Side there So when I turn it on It gets spinning now I’m just sliding Down so that I can get the steam onto The top of the milk That’s what’s adding that air Little bubbles Now the more air that you add the longer You add that airport the more froth You’re going to get so we don’t want big Bubbles and don’t want it to be foamy That’s all the air I’m going to need so I’m going to lift it up no more air
Keep my hand on the side Still warming up I can’t hold that about there and go one Two three off And that’s it I’ll give that a clean always keep your Seymour nice and clean And be sure to purge out any residual Milk that you have there now you can Give that a little knock if you’ve got Any bubbles that are floated to the Surface And now we want to spin this we want to Integrate that milk back in from the Foam back in with the hot milk Nice spin Simple pouring technique break up the Shot Spin your milk Angle in now we’re just going to mix the Milk Coffee and milk together about halfway Put your nose as close to the milk as to The shot as you can Keeping your steady flow as you level Your cup up And pull through now of course that Takes years of practice but that Technique is something that we’ve taught In other videos so check them out we’ve Done master classes on how to spin milk And that’s something that you’re going To enjoy when you make coffee at home is Your latte art so watch our other videos
